Ingredients for Chicken Ranch Salad

  • Chicken Breast, cut into small bite-sized pieces: you may use chicken thighs
  • Oil: I use Olive Oil but you can use avocado oil
  • Packed Greens of choice
  • Small Red Onion, sliced
  • Cherry or grape tomatoes, halved
  • English Cucumber, sliced or chopped
  • Avocado, sliced
  • Corn, Fresh or canned
  • For the Homemade Ranch Dressing if you want to make it from scratch you will need Plain non-fat Greek yogurt, Garlic cloves, Lemon Juice, chopped onions, Dijon Mustard, Fresh chives, Fresh parsley, Fresh dill, salt, and pepper.

How to make Chicken Ranch Salad

  • Make the dressing: Start with making the homemade ranch dressing. Add all the ingredients to a small jar, place the lid on, then shake to emulsify.
  • Marinate the chicken: Pour about 1/3 of the dressing over the chicken and allow it to marinate for at least 15 minutes. Refrigerate the remaining dressing until ready to use.
  • Cook the chicken: Next, heat the oil in a large non-stick pan, and add in the chicken in a single layer. Cook until golden brown and cooked through about 5-7 minutes.
  • Assemble the salad: To assemble the salad, add green to a large bowl. Top with remaining ingredients. Just before serving toss with the dressing and enjoy!
